Our Land
"Voltolina, as it has been said, is a valley surrounded by high and frightful mountains; it is the land of the powerful wines and cattle. As a result, there is more abundance of milk rather than wine amongst its peasants."
(Leonardo da Vinci, Athlantic Code - Folio 214, 1483 - 1518)
Some places touch our hearts; we cross others felling like strangers. There are glimpses of nature whose strength, beauty and grace enrich us; others pass unnoticed as if they were dull fog.
It is a matter of mutual identity and mysterious connections, of secrets and intangible affections. Valtellina, our land, is not simply a 'place' but a historical cradle in which we can recognize each other even though we come from different areas and villages where different dialects are spoken.
This is a boundary Italy which hides, or better said, does not show off its enormous richness made of natural resources like its pure air and its crystal clear waters. Not to mention the
Valtellina does not certainly need to be discovered. It has always been a land of international tourism, of full-bodied wines, of simple but traditional handicraft and cuisine. All of this has been appreciated for centuries by travellers going through this valley which has always been considered the gateway between Italy and the Continent. It is right here, at the nearly unspoilt 'ecological horizon', that bresaola refines its taste, fragrance and softness: the result of an ancient and skilful curing and preserving process of the best beef cuts.
